Hi.How do you take the rust off?

From David Pogue’s secret to extending the life of a razor is to simply dry it off after using it. “You can either blow-dry it with a blowdryer, or I keep a little bottle of rubbing alcohol next to the sink. I just swish the razor in the rubbing alcohol, and that instantly evaporates when you’re done. So the blade never has a chance to rust.” I don't see why this won't work for this peeler too.

Noticed the poor reviews about rust are fairly old (all 6 plus yrs.)...has anything changed? still need sos pad and oil to maintain?

no need to use sos pad and oil, just make sure you keep them nice and dry. i've had mine for 6 months and no rust.

Is it a smooth or serrated blade?

Smooth. But it rusted after about 2 uses. :(

Has anyone used this peeler to make chips like beet chips? I'm wondering if this could work better than a mandolin?

These are the best peelers I've ever used, but I would not use them for making chips. A mandolin cuts much more evenly and can also effectively handle larger slices (in width and depth). Using a peeler for chips is likely going to cause uneven crisping and burnt edges because it is much more difficult to cut a consistent thickness using one.
