BEST cookbooks, ever. Hands Down
Carolyn Ketchum’s cookbooks are the VERY best! Gave away or sold all my other keto cookbooks. Really. Her recipes NEVER fail IF you read the entire recipe and follow her instructions. She leans toward all erythritol, which I don’t really care for, but some things MUST be sweetened with it or fail. I have all of her printed cookbooks and all in spiral except for the last which isn’t available in spiral. Oh wow...BUY THIS BOOK...so much good info, beautiful photos and nummy recipes!!!
OMGoodness. I FINALLY found time to sit and read through this new book Easy Keto Desserts. (I bought the Kindle Version, I always buy Kindle Version books, but I MAY also order the hard copy too!). This book is DA-BOMB! First of all...READ the whole first part (before the recipes)...SO much good information! I have been doing LCHF for 11 months, and it's been HARD! I got fat and pre-diabetic by eating...you guessed it...DESSERTS! So, when I went LCHF, I tried to go "cold turkey" and cut out all desserts and sweets. (Many people say that is the way to go). Well, I couldn't do it. Of course, technically I COULD do it, but I missed my sweets and was miserable. Then I found All Day I Dream About Food.com. There are a handful of other good websites too, but Carolyn's is hands down THE BEST one I've found. This cookbook looks like it will be just an extension of that greatness. Oh, and the last part of the book where Carolyn tells how to rescue mistakes is PRICELESS. I never, ever thought of doing anything with my many ruined low carb baking attempts (but never have I had a recipe from Carolyn's other cookbooks or from her website fail) So, Carolyn...whatever you are paying yourself, double it. Whatever you are charging for your cookbooks...double it. You've made LCHF very possible for me, and for that, I TRULY thank you. (and just FYI, I was prediabetic when I started, now my A1C is much lower (in the middle of the "normal" range") and my Endocrinologist told me that I have the "labs of a runner". I'm 54, and slowly but surely I'm losing weight, and my blood sugars are totally fine now...no diabetes for me!

Amazingly Crafted Book & Delicious Recipes
The author really wowed me with this dessert cookbook. In the beginning of the book she gives advice on keto baking essentials and helps you familiarize yourself with ingredients and substitutes. I love that this is in there and that she doesn’t spend too much time on it. I definitely wanted to skip it and jump right into baking, but I’m glad I didn’t because I learned so much about ingredients and it took me less than 10 minutes to read the introduction! The book is beautifully designed with pictures and color coded font. She puts references icons with each recipe that give you visual cues about it (i.e. it’s no-bake, freezer friendly, small batch etc). She also includes a “how to rescue” almost any dessert, a quick recipe reference in the back AND a visual index when you’re in a hurry to find a recipe. She gives it all and the recipes all look fairly simple. Plus the ones I’ve made so far are so delicious!

Size of pan clarification
I need clarification about the recipe Mini No-Bake Lemon Cheesecakes on page 94. It yields 6 mini cheesecakes however to make the crust it says to line a standard-size muffin pan. I need to know since I am counting carbs for Keto. Also, the author doesn't mention the net carbs for any of her recipes. Should I minus the fiber from carbs to get the net carbs? Also, beautiful and yummy desserts! You need to invest in this book. I HIGHLY recommend it!!

Absolutely Wonderful Recipes....tasty, easy, and there is something for everyone!
Carolyn Ketchum makes eating healthier so much easier for me. As a Type 2 Diabetic I have worked very hard to change my eating habits. I have been very successful and feel very fortunate to have found these amazing, yet pretty simple, recipes. I own each of Ketchum's cookbooks and have bought extras to give as gifts. This is my latest cookbook (Easy Keto Desserts) and I think this may be my favorite of all my cookbooks! If you are new to KETO you will enjoy how she gives basic baking tips. She also tells you if you must use the sweetener she lists or if the food will turn out fine using your preferred sweetener. This particular cookbook has recipes for candy, frozen desserts, cookies and bars, puddings, crusts, sauces, and more. There are also some dairy free options included. If you want to see more about the author and check out some of her other recipes (not found in this book) you can find her blog All Day Long I Dream of Food or check her out on Facebook in the group All Day Long I Dream Low Carb. This seriously is a game changer!

More than a recipe book
As a diabetic and the worst baker in the world, I was desperately looking for sugar-free and low-carb sweet recipes. After several failures with modified recipes from the Internet, I decided to purchase this book. It arrived right on time for the holidays. For me the first, well, after the mouth-watering photos, second positive sign was the author's note that she had gestational diabetes, which "decided to stick around" after giving birth. In a few places (perhaps more, didn't get a chance to read the whole book yet), she even mentions particular sugar substitutes that spiked her blood sugar, noting that others may or may not have similar reaction. So, a diabetic mom of three--I felt I could trust her recipes. As for the recipes themselves. Admittedly, they are costly, as any other Keto diet would be. Almond flour, hazelnut meal, hemp, sugar-free chocolate, egg protein...The photos looked so amazing and the recipes relatively easy, I was determined though. So, a stop at Wholefoods and one at the local store, I was armed with all the ingredients, a list of which (with photos) she provides at the beginning of the book. I tried three different recipes (two cookies and the lemon curd) and they all turned out to be DELICIOUS. Mind you, I never baked anything delicious in my life before! Family loved them and I was thrilled to finally be able to offer family something yummy without messing up our numbers. For me this was more than a recipe book--just when I had given up hope on sweets, it was evidence that one can be diabetic and/or have diabetic family members, and still stay positive, eat healthy, be healthy, and enjoy life's sweet treats. And yes, all in moderation! Can't thank you enough!

A must for any Keto dieter with a well stocked pantry
I was already a fan of this author when I purchased this book, and I was not disappointed! Easy Keto Desserts delivers on flavor, convenience and quality. As I flipped through the book, it struck me that many of the recipes used ingredients I already had on hand. If you have a well stocked Keto kitchen, you’ll be thrilled. If you don’t have that, she provides a great breakdown in the beginning of the book to get your pantry ready for the cooking fun. You know that after dinner craving you get, where you just want to throw something together for a sweet treat with whatever is in the pantry? This book has more than a few recipes to solve this. It also has many, many recipes that only need a handful of ingredients I don’t have on hand. On top of that, these recipes are easy, don’t require fancy gadgets, fit into a LCHF or Keto lifestyle and are delicious! I have a batch of No Bake Mini Lemon Cheesecakes cooling right now and am so grateful to Carolyn for writing this fantastic book.
